 Corned Beef Hash
Ingredients :
1 Tin of corned beef
1 Onion
Celery x 2 sticks
Carrots X 1 large
Garlic x 2 cloves
Potatoes x 2 very large ( I use 1 white 1 sweet potato) Chopped parsley
Method:
1. Finely chop onion, garlic and celery and lightly
fry with 1 cal spray on a very low heat.
2. Dice potatoes and carrots and part boil until you can
insert a fork.
3. Drain and add to pan.
4. Cook for 8-10 minutes on a medium heat.
5. Dice corned beef into cubes.
6. After 8-10 minutes add to the pan.
5. Cook for further 5 minutes under the grill.
6. Add fresh parsley for garnish.
7. Serve with garlic bread or beans
